One-pot tomato rice

A whole ripe tomato cooked with the rice, then mashed in. Absurdly simple.

This is a well-known rice cooker trick, and it deserves its popularity.

  1. Rinse 1½ cups rice, add water to the usual line minus two tablespoons.
  2. Core one large ripe tomato and set it in the middle, stem side down.
  3. Add a teaspoon of soy sauce and a knob of butter. Cook as normal.
  4. Mash the tomato into the rice and season.

A fried egg on top turns it into dinner.
